Description
Quick and easy veggie egg rolls made in an air fryer.
Ingredients

- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1/2 cup sliced bell pepper
- 1/4 cup green onions, chopped
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger, grated
- 10 egg roll wrappers
- Cooking spray
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix cabbage, carrots, bell pepper, green onions, soy sauce, garlic powder, and ginger.
- Place a wrapper on a flat surface. Add 2 tablespoons of the veggie mixture in the center.
- Fold the sides of the wrapper over the filling and roll tightly.
- Repeat with remaining wrappers and filling.
- Spray the egg rolls with cooking spray.
- Place the egg rolls in the air fryer basket in a single layer.
- Cook for 10-12 minutes or until golden brown, flipping halfway through.
Notes
- Serve with dipping sauce of your choice.
- Store leftovers in the fridge for up to 3 days.
