- 1 medium eggplant, sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Slice the eggplant into fry-like shapes.
- In one bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each eggplant slice in beaten eggs, then coat with breadcrumb mixture.
- Place the coated eggplant fries in the air fryer basket in a single layer.
- Cook for 12-15 minutes, shaking the basket halfway through.
- Remove and serve hot.
Notes
- You can adjust seasoning as per your taste.
- Serve with your favorite dipping sauce.
- For a vegan option, use flaxseed meal instead of eggs.
