Description
Mini low carb pizzas made with air fryer eggplant.
Ingredients

- 1 large eggplant, sliced into 1/2 inch rounds
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup pepperoni slices
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the eggplant and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
- Pat the eggplant slices dry with a paper towel.
- Place the eggplant slices in the air fryer basket in a single layer.
- Cook for 10 minutes, flipping halfway through.
- Remove the eggplant and top each slice with marinara sauce, cheese, pepperoni, and Italian seasoning.
- Return to the air fryer and cook for an additional 5 minutes until the cheese is melted.
- Serve hot and enjoy your mini pizzas.
Notes
- Adjust toppings as per your preference.
- Store leftovers in an airtight container.
- Reheat in the air fryer for best results.
