A quick and easy recipe for air fryer lemon poppy seed muffins that are light and flavorful.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
- 1/2 cup buttermilk
- 1 large egg
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons poppy seeds
Instructions
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk oil, buttermilk, egg, lemon juice, and lemon zest.
- Add wet ingredients to dry ingredients and mix well.
- Fold in poppy seeds.
- Pour batter into muffin cups.
- Preheat air fryer to 320°F (160°C).
- Place muffin cups in the air fryer basket.
- Cook for 10-12 minutes or until a toothpick comes out clean.
- Let cool before serving.
