Description
A delicious and moist pineapple upside down cake made in an air fryer.
Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1 can pineapple slices, drained
- 1/2 cup brown sugar
- maraschino cherries for garnish
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a mixing bowl, cream the butter and granulated sugar until light and fluffy.
- Add the eggs, milk, and vanilla extract. Mix well.
- In another bowl, combine flour, baking powder, and salt. Gradually add to the wet mixture.
- In a round cake pan, sprinkle brown sugar evenly on the bottom.
- Arrange pineapple slices on top of the brown sugar and place cherries in the center of each slice.
- Pour the batter over the pineapple slices.
- Place the pan in the air fryer and cook for 25-30 minutes or until a toothpick comes out clean.
- Let it cool for a few minutes before inverting onto a plate.
Notes
- Use fresh pineapple for a lighter taste.
- Check the cake for doneness a few minutes before the timer goes off.
- Serve warm for best flavor.
