- 4 medium russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- Wash and dry the potatoes, then pierce them with a fork.
- Cook the potatoes in the air fryer for 30 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some flesh.
- Brush the insides with olive oil and season with salt and pepper.
- Air fry the potato halves for an additional 5 minutes until crispy.
- Add cheese and return to the air fryer until melted.
- Top with sour cream and green onions before serving.
