Ingredients

- 4 bell peppers, halved
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, mix rice, black beans, corn, cheese, chili powder, cumin, salt, and pepper.
- Stuff each bell pepper half with the mixture.
- Place the stuffed peppers in the air fryer basket.
- Cook for 10-12 minutes until the peppers are tender.
- Remove and let cool for a few minutes before serving.
Notes
- Use any color of bell peppers.
- Adjust spices to your taste.
- Serve with salsa or guacamole if desired.
