A simple and healthy recipe for air fryer stuffed bell peppers filled with vegetables and grains.

- 4 bell peppers
- 1 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
- Stuff each bell pepper with the mixture.
- If using, top with shredded cheese.
- Place stuffed peppers in the air fryer basket.
- Cook for 10-15 minutes until the peppers are tender.
- Remove and let cool slightly before serving.
