Instructions
- Preheat the air fryer to 400°F (200°C).
- Remove the leaves and stem from the cauliflower and cut it into florets.
- Pulse the florets in a food processor until they resemble rice.
- In a bowl, toss the cauliflower rice with olive oil, garlic powder, onion powder, salt, and pepper.
- Add the mixed vegetables and stir to combine.
- Place the mixture in the air fryer basket and cook for 10-12 minutes, shaking halfway through.
- Once cooked, drizzle with soy sauce and mix well.
- Serve hot, garnished with green onions.
