Description

A light and healthy version of eggplant parmesan made in an air fryer.


Ingredients

  • 1 medium eggplant, sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Sprinkle salt on the eggplant slices and let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. Mix breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  5. Dip each eggplant slice in the breadcrumb mixture, coating both sides.
  6. Spray the air fryer basket with olive oil spray.
  7. Place the coated eggplant slices in the basket in a single layer.
  8. Air fry for 10 minutes, flipping halfway through.
  9. Remove the slices and layer them in a baking dish with marinara sauce and mozzarella cheese.
  10. Air fry the layered dish for an additional 5 minutes until the cheese is melted.
