Description
A light and healthy version of eggplant parmesan made in an air fryer.
Ingredients
Scale
- 1 medium eggplant, sliced
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the air fryer to 375°F (190°C).
- Sprinkle salt on the eggplant slices and let them sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- Mix breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a bowl.
- Dip each eggplant slice in the breadcrumb mixture, coating both sides.
- Spray the air fryer basket with olive oil spray.
- Place the coated eggplant slices in the basket in a single layer.
- Air fry for 10 minutes, flipping halfway through.
- Remove the slices and layer them in a baking dish with marinara sauce and mozzarella cheese.
- Air fry the layered dish for an additional 5 minutes until the cheese is melted.
Notes
- Serve with fresh basil on top for extra flavor.
- Adjust seasoning according to your taste.
- Pair with a side salad for a complete meal.
