Ingredients

  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, chopped
  • 1 cup cherry tomatoes
  • 1 cup mushrooms, halved
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, combine vegetables.
  3. Add olive oil, oregano, garlic powder, salt, and pepper.
  4. Toss to coat the veggies evenly.
  5. Thread the vegetables onto skewers.
  6. Place skewers in the air fryer basket.
