Description
A healthy and easy recipe for stuffed bell peppers made in an air fryer.
Ingredients

- 4 bell peppers
- 1 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix quinoa, black beans, corn, tomatoes, cumin, chili powder, salt, and pepper.
- Stuff each pepper with the mixture.
- If desired, top with cheese.
- Place peppers in the air fryer basket.
- Cook for 15-20 minutes until peppers are tender.
- Remove and let cool for a few minutes before serving.
Notes
- Choose bell peppers of similar size for even cooking.
- Feel free to add other vegetables to the filling.
- Store leftovers in the refrigerator for up to 3 days.
