A healthy and easy recipe for stuffed bell peppers made in an air fryer.


Ingredients

  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix quinoa, black beans, corn, tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff each pepper with the mixture.
  5. If desired, top with cheese.
  6. Place peppers in the air fryer basket.
  7. Cook for 15-20 minutes until peppers are tender.
  8. Remove and let cool for a few minutes before serving.

Notes

  • Choose bell peppers of similar size for even cooking.
  • Feel free to add other vegetables to the filling.
